About this coffee
We were initially sceptical to try an experimental-process coffee but once we did the cupping we were converts! The peachy notes of the coffee are lovely. We found that it is best not to brew too strongly (we found 15g of coffee per 250ml of water was great) to not overpower the fruity notes of the coffee.
Taste notes: Peach, fruity candy, intensely sweet and honeyed
Variety: Arabica Caturra (screen size 15+)
Roast profile:
A roast profile with a light to medium roast level and sufficient development time to bring out the intense sweetness of the coffee.
The producers:
This exciting coffee comes from the farm Finca La Luisa of Juan Pablo Velez.
Processing
This lot was processed using a double fermentation process. Firstly, the cherries are placed in stainless steel tanks to ferment in an oxygen-free environment for five days.
The cherries are then removed and de-pulped. The pulped beans are then fermented for a second time together with the leached liquor from the first fermentation process plus the addition of fresh peach juice. After three days the beans are laid out to dry on raised beds.
