The Process

Cherries are hand-sorted before a pre-pulp float removes underripe or damaged cherry and any foreign material. After pulping, the cherry is laid out across raised beds and dried for 30 days — turned constantly in full sun and covered overnight to protect against moisture. Once dried, the outer fruit is removed and the beans are sorted ready for export.

Bumbogo station was built in 2017 and has more than doubled production since 2018, with drying beds now spreading across the surrounding hillsides.
