Roasted medium specifically for espresso, it pulls a shot with mellow orchard-fruit sweetness, toasted hazelnut and a rounded milk chocolate finish — bright enough to stay interesting, sweet enough to shine in milk.

Much of that potential is lost among unassociated smallholders who lack the infrastructure to dry and process consistently. Falcon Peru SARL, established in 2018, works directly with producers around Jaén — hand-pulping, fermenting and drying on patios or raised beds, then delivering parchment to a dedicated warehouse for grading, moisture testing and cupping. Farmers get an immediate quality analysis, a cup score and an offer price, all under Falcon's Blueprint Project for economic transparency. Peru was also the first origin chosen for Falcon's Carbon Project, launched in 2022 to study farm-level carbon emissions.
