If you've spent any time reading coffee bags, you've seen the word "Arabica" printed proudly on nearly all of them. Robusta, meanwhile, usually gets mentioned as an afterthought — the "other" coffee, associated with instant granules and cheap blends. That reputation is out of date. Robusta is a genetically distinct plant with its own biology and its own strengths, and it's a growing focus for roasters who've started paying it real attention. Here's what it actually is, and why it deserves a second look.

Two species, one very large genus
All coffee comes from the genus Coffea, part of the plant family Rubiaceae. More than 100 species have been formally described within the genus, according to Kew's Plants of the World database, but only two are grown commercially at real scale: Coffea arabica and Coffea canephora. The latter is the species behind what's sold as Robusta coffee — "Robusta" is a trade name rather than a formal species name, and C. robusta is now treated by Kew as a synonym of C. canephora. A third species, Coffea liberica, is grown in smaller volumes and plays a minor commercial role; the coffee sold as "Excelsa" is usually discussed alongside Liberica, though current taxonomy places it as a synonym of the related species C. dewevrei rather than as its own species.
The plant has been known to Western science for a surprisingly long time. The Venetian botanist Prospero Alpini gave one of the earliest European descriptions of the coffee plant in his 1592 work De Plantis Aegypti, after encountering it in Egypt. Over a century later, in 1713, the French botanist Antoine de Jussieu formally described a coffee plant grown at the Jardin du Roi in Paris, initially classifying it under the name Jasminum arabicanum. Coffee's modern taxonomy — the framework separating Arabica, Robusta, and the genus's many other species — took shape later still, with the botanical work of Auguste Chevalier and Jean Lebrun in the mid-20th century forming much of its basis (historical background here draws on Francesco Illy and Riccardo Illy, The Book of Coffee: A Gourmet's Guide, Abbeville Press, 1989).
The genetics behind the name
The biggest difference between the two species isn't visible at all: it's chromosomal. Arabica is an allotetraploid, carrying 44 chromosomes, thought to have arisen from a natural hybridization between two diploid Coffea ancestors. Robusta is diploid, with 22. One consequence is reproductive: Arabica flowers are self-compatible and can pollinate themselves, while Robusta flowers are self-incompatible and depend on cross-pollination — mainly by insects — to set fruit. That cross-pollination requirement keeps Robusta's gene pool more diverse than Arabica's, a factor researchers studying coffee genetics connect to some of the species' hardier traits, though its overall resilience isn't reducible to any single cause.
That hardiness shows up in how the plant grows. Left unpruned, Robusta typically grows into a larger tree than Arabica, reaching 8–10 metres compared with Arabica's 6–8 (both are kept trimmed to roughly 2–2.5 metres on working farms to make harvesting manageable). Robusta tolerates heat that would stress an Arabica plant within days, generally coping with stretches above 30°C, and it can be grown at low elevations — from near sea level up to around 900 metres — where Arabica performs poorly. Arabica prefers cooler, higher ground, typically 900–2,000 metres, and both species share one vulnerability: neither survives frost.
A disease that reshaped a country's economy
Robusta's toughness isn't just a lab curiosity — it changed the course of coffee history. Arabica is highly susceptible to coffee leaf rust, caused by the fungus Hemileia vastatrix. After the disease was identified in Ceylon (now Sri Lanka) in 1867, it swept through the island's Arabica plantations; within about two decades, coffee-growing land there had collapsed by roughly 80%. Rather than keep replanting a crop the fungus kept destroying, planters converted their estates to tea — a large part of why Sri Lanka is known for tea today rather than coffee. Robusta is generally more resistant than Arabica to the same rust, which is one of the traits that has made it more attractive to growers as they contend with a changing climate — though "more resistant" isn't the same as immune, and Robusta can still be affected under the right conditions.
Bean, bite, and buzz
You can often tell the two species apart just by looking at the green bean. Arabica beans are elongated and flatter, with a gently curved (S-shaped) crease running down the middle. Robusta beans are rounder and more convex, with a straighter groove. Each coffee cherry typically holds two beans, each with one flat side where it presses against its neighbour. When pollination is incomplete and only a single seed develops, that bean has no neighbour to flatten against, so it fills out the whole cherry and grows into a small, rounded bean known as a "peaberry."
Some of the flavour difference comes down to chemistry, though the exact figures vary by genotype, growing origin, and how they're measured. Robusta is commonly cited as containing roughly double the caffeine of Arabica — figures from lab-tested samples put Arabica in the range of about 0.8–1.4% caffeine by dry weight and Robusta at roughly 1.7–3.5%. One widely discussed theory is that caffeine functions partly as a natural pest deterrent, which may be part of why Robusta — often grown in hotter, lower-altitude conditions — tends to produce more of it, though the full explanation for the gap isn't settled.
Robusta is also generally richer in chlorogenic acids (CGAs), natural plant compounds that contribute bitterness and body in the cup; estimates put Robusta's CGA content at roughly 7–14% of dry weight against about 3.5–7.5% in Arabica. CGA is one of the most-studied compounds in coffee, but that doesn't establish that drinking Robusta delivers specific health benefits — human research on coffee and metabolic markers is mixed, and much of the more optimistic evidence involves concentrated green coffee extracts rather than a cup of brewed Robusta. A 24-week randomized trial in the American Journal of Clinical Nutrition, for instance, found no significant improvement in insulin sensitivity from regular coffee consumption. Roasting also breaks down a substantial share of a bean's CGA content, so a dark-roast Robusta won't carry anywhere near the compound levels of the green bean.
In the cup, Robusta's chemistry generally translates into a bolder, earthier, more bitter profile with lower acidity than Arabica — sometimes described as woody or nutty in lower grades, but chocolatey and full-bodied in well-processed specialty lots. It also has a reputation in espresso circles for what it does to the crema: a shot pulled with some Robusta in the blend tends to top out with a heavier, longer-lasting foam than a pure Arabica shot, which is a large part of why traditional Italian and Vietnamese espresso blends often work a portion of it in for body and mouthfeel.
Where Robusta stands today
Arabica still accounts for most of the world's coffee, but the balance has been shifting. Over the first five months of the 2025/26 coffee year, Robusta made up about 39% of global green-bean exports, according to International Coffee Organization data — a notably larger share than a decade or so ago, though the split moves year to year with weather, disease pressure, and price. That growth has been driven by Robusta's lower cost, its resilience to heat and disease, and a rising number of specialty producers — particularly in Vietnam, Uganda, and India — investing in higher-quality processing that's changing what "Robusta" can taste like in the cup.
