Peru El Oso: Fruity, Washed Peruvian Coffee Roasted for Filter
El Oso comes from the Cooperativa Agraria Frontera San Ignacio in Cajamarca, northern Peru. It is washed, grown between 1,350 and 1,890 masl and scores 84 SCA points. Expect green apple, peach and kiwi with a bright grapefruit lift, resting on a base of chocolate and caramel.
The Bear Behind the Name
"Oso" is Spanish for bear. The farms lie in the buffer zone of the Santuario Nacional Tabaconas Namballe near San Ignacio, a protected area where spectacled bears and other native wildlife face real pressure. The El Oso Project helps conserve the surrounding forest. The cooperative supplies native forestry species for replanting, coffee seedlings suited to the forest environment, solar drying tents and composting warehouses that reduce the need to buy fertiliser.

How It Is Processed
Cherries are floated to remove defects, fermented for 18 to 36 hours depending on the weather, washed again and dried for 10 to 21 days. Fermentation often takes place in wooden tanks made from fallen Romerillo trees, which may not be cut down. The cooperative also runs its own dry milling facilities, which gives it control over the quality that leaves the farm.
