This Yirgacheffe coffee is exceptional and is an Ethiopia Heirloom variety.
Roast profile:
We used a roast profile with a light-medium roast level to highlight the fruity notes of the coffee but also with enough development time to produce a sweet, full-bodied coffee.
Region
Konga is a village in the Yirgacheffe region of Ethiopia. The Yirgacheffe region is famous for producing some of the best and most interesting coffees. Ethiopia is where coffee originated and has coffees with wild and exciting flavours.
Processing
This coffee was processed at the Konga washing station owned by Takele Mammo in Konga. The coffee is processed using the simplest and most traditional method; namely natural processing, where the ripe cherries are dried in the African sun for 12-15 days.
