Roast profile:
We use a light-medium roast level with a fast roast time to highlight the lovely floral and fruity notes. Great for filter and pour-overs but it will be loved by espresso drinkers who like a lot of brightness in their cup.
The producers:
This lot is from Manuel Armando Peralta's Finca Los Jilgueros.
The Peralta Family coffee-growing history dates back to the beginning of the 20th century. We are delighted with this micro-lot from the Peralta estate. In our opinion this micro-lot Pacamara coffee rivals the Geishas.
The process
This lot utilises a natural process. Coffee selected and harvested then laid out to dry in cherry for a total of 28 days, 22 days on outdoor raised beds and 6 days undercover. The coffee is turned regularly throughout the day and covered at night to protect from moisture. This coffee is processed at the San Ignacio Mill in Mozonte, near Ocatal in Nueva Segovia. The mill manager Mayerling Escoto has specific responsibility for all the processing at this microlot-only mill.
The region
The coffees from FINCA Los Jigueros are grown in the Nueva Segovia region, known for its high altitudes and challenging terrain. Located near the village of Brujil, this area is renowned for its Creole seed beans and is a significant contributor to the local economy. The beautiful terrain consists of rolling hills, dense forests, and frequent cloud cover.
