Roast profile: 

We used a balanced profile with a light-medium roast level to highlight the fruity notes of the coffee but also with enough development time to produce a sweet, full-bodied coffee.

The producer: 

Ratnagiri estate, established in 1920,  consistently produces some of the best Indian coffees. It is owned and run by Ashok Patre, whose family have owned the farm for several generations. 

The process

The coffee is naturally-processed with an extended anaerobic fermentation period and is dried on raised beds for several weeks in partial shade.

The farm

The Ratnagiri estate, near Chikmagalur, Karnataka, is an organic/biodynamic farm and has Rainforest Alliance Certification. The estate is a lush shaded environment home to over 48 bird populations, monkeys, leopards, wild boar, tigers and sometimes even elephants! Because of the rich biodiverse environment, Ashok places ecology at the forefront of his approach to farming.
